Everyone makes it different, but here's how through trial and error, I learned to make it.
For 2 cups:
Ingredients: - 4 teaspoons of ground cardamum or 10 whole pods. - A 3-5 inch piece of ginger. - 2-3 black peppercorns. - 5-7 whole cloves. - A stick of cinnamon. - 1 cup of water. - 1 cup of milk. - 1 dash of vanilla extract. - Two black teabags, or four teaspoons of loose leaf.
Grind the spices (don't grind the cinnamon stick, just break it up) in a mortar, add them to a pot, add the cup of water, get it boiling.
Chop the ginger, not course but not fine, add it to the pot.
Let it boil for 7-10 minutes, then turn off the stove and add the tea, steep for 5 minutes then remove.
Add the up of milk and get it to a boil, turn off the heat and add the dash of vanilla.
Add sugar to taste, strain.
Notes:
- If you want to make more or less, scale up or down the ingredients.
- This recipe is kinda spicy and strong, not your usual starbucks chai latte, if you want less spice don't grind the peppercorns, or remove them for zero spice, also scale down the other spices and boil for less time.
- Its kinda hard to fuck it up except for the pepper and vanilla, so be careful with how much you add, you can go kinda crazy with the ginger and other spices.
