I am from Lorain, Ohio. Went to the Lorain County JVS for my last two years of high school and going to Lorain county community college college culinary program. Which is just getting off the ground (after 15 years or so since the rumor saying they will get one). better than going all the way to tri-c.

Well I want to own a restaurant. That is funny that you want to go to japan, I did a paper on Japanese cuisine for my international cuisine class and I know two people that went there and got into some type of trouble. I guess I went to go there too. Remember you can tell a lot about a cuisine by the location.;

I'm in baking and Pastry right now, doing culinary next year. I did a paper on Melon Pan (melon bread) >_> still haven't made it yet.... I should though. But ya, so far, everything Japanese that the Chefs and culinary friends of mine make have been wonderful! Kinda got a thing going. I bring cookie, they give me sushi, I bring cake, they give me stir fry, I bring doughnuts, they give me steak. Etc. I bring sweets, they feed me. Good partnership there.

Well one time I bring my senior chef instructor pierogies and he made my IQF it for him. I was lucky because he only made me do his not the other that I brought for my other teachers. No I don't read many magazines. What's Letters to a Young Chef about? Oooh, have you seen Kings of Pastry. It's an instant watch on netflix according to Chef. It's really inspiring to watch!

Well sizzle magazine is a culinary magazine which is now online and Letters to a Young Chef is by Daniel Boulud. He is famous chef and he talk about what he had to do when he was started out and give some good information what a chef needs that is started out (like you should not call yourself a chef unless you had 10 years in the business). I had not seen King of Pastry and I do not have netflix. So what made you go into the culinary field.

I've always loved the food industry. My grandfather use to own a restaurant, and is a food salesman. I've always been good at and enjoyed cooking and baking, and I'd love to own my own bar and cafe someday. So when my plans to go into writing fell threw cause of... reasons... I thought I might as well go to culinary. Owning my own bar was always kind of a later in life, retirement plan. But, It's working out right now just fine.

My mom use to work in a bakery and when I was growing up she made pierogies, chicken paprikash, and stuffed cabbage.I started helping her when I was in middle school. My old history teacher said "We take the jobs of our parents" which I say it half right we go into a job field that our parent was doing when we were growing up. My dad was against me being a chef because of my half brother that is 15 years older than me. I don't really know the details but, they do not see or talk to each other same goes with his brother.

Well I have 2 half brothers that are around 15 year older than me and a brother that is a year older than me so it ok. I haven't really saw my half brothers that much not since the late 90s. Same goes with my grandma that is 86. And I won't let anyone to hold me back. Carpe Diem. I like email better than text

What do you think about a Moulin Rough cake? :3 Some girls in class are doing Rocky Horror Picture Show. I cook, but I'm not really a chef, per se. I don't go to school or anything for it, so the extent of what I know is what I've been taught by my mom and what I've found out myself. I can come up with recipes of my own, but I'm horrible at following anyone else's ;-;

Something funny happen today. I ask my boss how to refill the nitrous canister. After we clean it we put pint of heavy cream in and he thought he had sabayon but he got sour cream\salsa mixture that we use for something else. He tasted it because it seem wrong some how and ask what we put in. He ask some body else to try it after we know what we put in it. All in all we had to open it without releasing the nitrous.

So, I'm gonna try out for the culinary team. Anyone got any good ideas for what I can do with Chicken, wild mushrooms, butternut squash, cauliflower, Yukon Gold potatoes, and spinach? I have one hour to make one dish, plated twice, using all these ingredients. I can also use anything other ingredients that I want, but I have to use all the mandatory ones.

IDEAS WOULD BE A GREAT HELP!!! T^T

I'm still in the middle of deciding whether to go into culinary school or be an elementary school teacher. I bake whenever I have the chance to.

I wish my High School had some sort of Home Economics or Culinary class... Somehow my first attempts are usually great then the 2nd is almost always a failure...

When you are in school for being a teacher you can work part time at a restaurant that pay well to help out to pay for your schooling. When you are a teacher during the summer you can work at a golf course's restaurant or a restaurant that need help during the summer. Plus you might not get a teaching job right away or in between teaching jobs, so you need a way to get money if you don't have a lot.

But if you need a reason why to go to culinary school.
Here it is
Culinary arts is not just cooking and baking. It is also give you management skill, nutrition knowledge, and you might learn about alcohol.

I'm a culinary student that is currently not in college due to no transportation and no job to support paying for everything. I plan on specializing in baking and pastry, though. I think it'd be nice to open a small bakery in a little town somewhere...

SO~ Our school is trying to be told that, even if students have their OLCC, they can't poor wine or touch any open bottle of alcohol. We can't even cook with it! WTF?!

In my senior year we use alcohol a lot (beer, wine, and triple sec) and my chef told us to not joke around or we can't use it any more. Learning about beers, spirits, and wines can give you more respect for them if you are not old enough to drink. And cooking with alcohol is a more advance basic of culinary arts and the alcohol that is cooked is almost all the way gone.
This what I say talk to the supervisors of your school and say why the students need to use alcohol in culinary arts. If you need help, I am learning about alcohol right now.

We NEED to learn about alcohol and how to use it! It's a HUGE part of our industry! It's a permit that here in Oregon you have to have in legally serve alcohol.

I will just going to re cap what is happening in my culinary learn. I woke up late for my beverage management (alcohol class) final but, the teacher understand because I never miss a class. This semester I am taking career management and servsafe.
Career management- reading "How to win friends & influence people in the digital age" and my teacher write about restaurants in cleveland and does a food segment for a news station called hungry adventure (you can look it up on youtube).
Servsafe- only have 2 more years of being certify but, I still have to take the class. Hopefully by the end of 2014 I will be done with the college courses and it better this way because I don't have to be certify again until 2018.

My update on school- This year is easier and harder! I don't have any academics because I took them all last year. But it's harder because I work from 6am-12:30pm then have culinary from 3pm-8pm, when I get home I'm either cleaning, doing homework, or looking for a weekend job.

Today in Career Management there was a guest speaker named Eric Williams. He own Momocho which was on diner, drive in and dives. One thing that he said for all the time he speak to my teacher's class. No one has asked him to do a stage (gain work experience without pay) at his business after he say it was OK. Maybe I will do it during spring break.

Greetings Dollars,

In short no, at least not professionally. However a necessary skill turned into a fruitful passion and I elevated to my families second best cook, first place going to my Aunt who is exceptionally skilled and I aspire to one day take that title from her.
We all have recipes that we're more confident in making, and those that we prefer and find more rewarding once the dish is done. Personally I've become quite an adapt European specialist chef, from Italian, Greek, French, German, British and many in between, I've taken to the habit of learning a new recipe every month. I find a new suggestion and practice it through the month until I am proud to add the recipe to my list of "Can Cook".

Not a culinary student, but I am the best chef in the house. I can make a variety of Mexican dishes (enchiladas, chiles rellenos, tamales, etc). I've started learning some Korean recipes as well, my favorite at the moment is Korean Curry Rice!
