When cooking something with potato in it how many leave the potato skin on? Or eat the potato skin from a bake potato? For my I leave it on as much as I can. Potato pancake, French fries, hash browns, home fries. My reason is it is a good source of insoluble fiber.

I always leave the skin on, unless I'm making mashed potatoes. The skin has such a good flavor.

I mostly leave the skin on because it's healthy that way. Though I won't eat it if its on a baked potato because I don't like the texture but any other way oddly enough I do. Oh and no skins in mashed potatoes that's a must in my family.

I peel that bastard off. Think about it, it's been coated with fertilizers and pesticides for months before arriving at your grocery store.

I'd think the skin would get less of those kinds of chemicals than something like strawberries or tomatoes would. They grow underground, so the pesticides don't really touch the part you actually eat.

I like potatoes.

If it's not too disgusting, I'll eat it. Sometimes the skins are just... bleh on certain potatos. And yams. Never try to eat yam skin :|
