Medium rare to just medium. I don't like it when it's way undercooked that much. When at least part of it has been cooked thoroughly, I feel like it has more flavor, and the rare part adds its juicy texture.
If it's overcooked though or well done, it's like all that juicy flavor is gone and it's just really dry. Even with steak sauce, it's hard to subvert that.

You can also order your steak "blue" in some steakhouses. It's one step below rare.
They literally just through it on long enough to get the outside cooked.

I think that with steak it depends on the cut personally I prefer a thinner cut at medium to well done as that gives the best flavour if your after a thick cut meat eat lamb
