Cauldron Cakes Recipe
Cauldron Cakes
Inspired by Bakingdom

Yields 12 cauldrons

12 devil's food cupcakes
1 recipe for Chocolate Glaze (below)
1 recipe for Marshmallow Filling (below)
Approximately 1/2 cup chocolate chips
Edible gold glitter

Chocolate Glaze
6 ounces (1 cup) semi-sweet chocolate chips
4 tablespoons butter

In a double boiler, melt together the chocolate and butter, stirring until smooth. Glaze will be relatively thick. Remove from heat and let sit 5 minutes before use. If chocolate thickens too much, return to heat and stir until smooth and melted once more.

Marshmallow Filling
1 cup Marshmallow Fluff (or prepared marshmallow cream)
1/2 cup vegetable shortening
1/2 cup confectioners sugar
2 teaspoons vanilla extract

In a medium bowl, beat together the marshmallow fluff, shortening, sugar, and vanilla extract until light and fluffy, about 3-5 minutes.

To assemble
Using a cupcake corer or sharp knife, cut out a cavity in the bottom of the cupcake. When using a knife, I run it in a circular motion around the cupcake, while always pointing the knife towards the center (this will make the cavity cone shaped).

Dip the top of the cupcake into the chocolate glaze. Flip the cupcakes right side up and let rest until the chocolate sets, about 30 minutes. To speed up the process, place cupcakes in the refrigerator.

To make the cauldron feet, take 3 chocolate chips and form a small triangle, placing each chocolate chip roughly an inch from the others. Place the top of a cupcake onto the chocolate chips and push down ever so slightly so the chocolate chips will stick into the chocolate glaze. Repeat for the rest of the cupcakes.

Place remaining chocolate glaze into a piping bag and pipe a chocolate rim around the edge of the opening to the cauldron. If chocolate is too thick to pipe, heat chocolate glaze up until warm and allow to sit until glaze thickens slightly. If chocolate glaze is too runny to pipe, wait a few minutes until the glaze thickens to a pipe-able consistency. Alternatively, you could use a knife to spread the glaze around the edge of the cupcake.

Fill a pastry bag with marshmallow filling and pipe into the cavity of the cupcakes. Garnish the top with edible gold glitter.

To make cauldron handle, melt the remaining chocolate chips, stir until smooth, and place into a pastry bag. You don't need a special tip for this step; I simply cut off the very end of the pastry bag which was sufficient. On a non-stick mat or wax paper, pipe out the handles (feel free to use any pattern you'd like). I recommend measuring the cupcakes with a ruler to determine how wide you need to make the handles before piping. Let the chocolate set until hardened, approximately 30 minutes, before very carefully peeling off of the non-stick surface and placing into the top of each cupcake.

And you're done! Eat and enjoy.

Fluffy Vanilla Cake

Yield: One 2-layer, 8-inch round cake

Ingredients

6 large egg whites (6 ounces/180 grams) at room temperature

1 cup whole milk ( 8.5 ounces/242 grams) at room temperature

2 1/4 teaspoons pure vanilla extract (9 grams) — I use Nielsen-Massey Vanillas 8-oz. Madagascar Bourbon Vanilla Extract

2 1/4 cups sifted cake flour (8 ounces/225 grams)

1 3/4 cups sugar (12 ounces/350 grams)

1 tablespoon + 1 teaspoon baking powder (19.5 grams)

3/4 teaspoon salt (5 grams)

12 tablespoons unsalted butter (6 ounces/170 grams), at room temperature and cut into cubes

Method

1. Preheat oven to 350°F (180°C). Grease, line with parchment, and flour two round 8-inch pans.

2. In a medium bowl or measuring cup, combine and stir the egg whites, 1/4 cup of milk, and the vanilla. Set aside.

3. In the bowl of an electric mixer fitted with the paddle attachment, combine the dry ingredients together on low speed (I use the “stir” setting on my mixer) for 30 seconds.

4. Add the butter and remaining 3/4 cup of milk, and mix on low speed until just moistened. Increase to medium speed and mix for 1 1/2 minutes.

5. Scrape the sides of the bowl and begin to add the egg mixture in 3 separate batches; beat on medium speed for 20 seconds after each addition.

6. Divide the batter in two, spreading it evenly with a small offset palette knife. If you have a kitchen scale, weigh to ensure 2 even layers.

7. Bake 25-35 minutes or until a cake tester comes clean when inserted into the center. Be so careful to not overbake. Check cake at 20 minutes, but not before, and once you feel it’s almost ready, set the timer for 2 minute intervals. Let cool on racks for 10 minutes before loosening the sides with a small metal spatula, and invert onto greased wire racks. Gently turn cakes back up, so the tops are up and cool completely.

8. Wrap tightly and store at room temperature for up to 2 days, refrigerator for up to 5 days, or frozen for up to 2 months. Best eaten the same day as baked.

Whipped Vanilla Bean Frosting

Ingredients

3 sticks + 2 tablespoons (375 grams/13 ounces) unsalted butter, softened and cut into cubes

3 cups sifted (480 grams/7 ounces) confectioners’ sugar (icing, powdered)

3 tablespoons (45 mL) milk

1 vanilla bean, scraped

1 teaspoon (5 mL) pure vanilla extract — I use Nielsen-Massey Vanillas 8-oz. Madagascar Bourbon Vanilla Extract

pinch of salt

Method

1. In the bowl of an electric mixer fitted with the paddle attachment, whip butter for 8 minutes on medium speed (I use “4″ on my KitchenAid). Butter will become very pale & creamy.

2. Add remaining ingredients and mix on low speed for 1 minute, then on medium speed for 6 minutes. Frosting will be very light, creamy, and fluffy.

3. Best used right away.

4. You can eliminate the vanilla bean and use a total of 1 1/2 teaspoons (of pure vanilla extract.

Vanilla Bean Cake Layers

2 2/3 cups (540 g) granulated sugar

9 (275 g) egg whites, at room temperature

4 1/2 cups (630 g) all-purpose flour

2 tablespoons (22 g) baking powder

1 teaspoon (6 g) salt

2 cups (500 mL) buttermilk

1 tablespoon (15 mL) Nielsen-Massey Vanilla Bean Paste – 4 oz, OR 1 vanilla bean, split & scraped

1 teaspoon (5 mL) pure vanilla extract

Method:

1. Preheat oven to 350° F. Butter three 8″ x 2″ round cake pans, line with parchment rounds, and dust with flour, tapping out the excess.

2. In a stand mixer fitted with the paddle attachment, beat the butter and sugar on medium-high speed until lighter in color and slightly increased in volume, 3 to 5 minutes. Lower the speed to medium and add the egg whites gradually, mixing until fully incorporated.

3. Sift the flour, baking powder, and salt into a medium bowl. Mix vanilla extract and vanilla paste (or contents of vanilla bean) into buttermilk. Alternate dry ingredients and buttermilk into creamed mixture, beginning and ending with dry ingredients. Mix until just incorporated or finish by hand gently.

4. Divide the batter evenly between the prepared pans. If possible, weigh the batter in each cake pan on a digital kitchen scale to ensure even layers. Smooth with small offset palette knife, and bake for about 30 minutes, rotating once after 20 minutes. Cake is done when toothpick or skewer comes clean.

5. Let pans cool on wire rack for 10 minutes, then invert cakes onto racks, gently, peeling away parchment rounds. Let cool completely.

haha i have a cake-related story!

so i was trying to make a patriotic cake for labor day, right? so i wnated it to be red white and blue. so i took a yello-cake mix from the pantry, mixed it up and put blue food dye in it.

then i wanted homemade iceing, right? so i mix up a batch and put red food dye in it.

---HOWEVER: if you have ever taking kindergrden, you know that yellow (cake) plus blue (dye) makes green! +_+ and, well... i didnt use enough dye so red (dye) plus white (icing) makes pink! =_=.

Well anyway i put patriotic sprinkels on it and had a (reversed) watermellon cake for breakfast the next day.

so the lesson is that when your younger sister tells you to use white cake -- even if it has "fun-fetti" in it -- itll be way better for achieving your goals!!

Apple Cinnamon Cake. Recipe from thepastryaffair, google it. it's awesome.

Apple Cinnamon Cake
Adapted from Smitten Kitchen

6 medium apples, peeled and diced (about 8 cups worth)
1 1/2 tablespoons cinnamon
1 1/4 cups sugar, divided
1 3/4 cups all-purpose flour
1 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon salt
1 cup vegetable oil
1 cup brown sugar
1/4 cup apple cider (or apple juice)
1 tablespoon vanilla
4 eggs
1/2 cup walnuts or almonds, chopped (optional)

Preheat oven to 350 degrees F (180 degrees C). Grease a tube or bundt pan.

Place apples in a large bowl, sprinkle with cinnamon and 1/4 cup sugar, and stir to coat evenly. Set aside.

In a large mixing bowl, mix together the all-purpose flour, whole wheat flour, baking powder, and salt. Beat in the vegetable oil, 1 cup granulated sugar, brown sugar, apple cider, vanilla, and eggs until combined. Stir in the walnuts or almonds.

Place half the cake batter in the prepared pan, layer on half of the cinnamon apples, the rest of the cake batter, and the rest of the apples. Bake for about 90 minutes, or until a toothpick inserted into the center comes out clean. Run a knife around the edge and cool in the pan before turning the cake out. Dust with powdered sugar, if desired.

Chocolate Fudge Cake with Ghost Meringues

Yields 2 8-inch cake layers

Chocolate Cake
Adapted from Sweetapolita

1 3/4 cups all-purpose flour
1 1/2 cups granulated sugar
3/4 cup cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1 cup strong black coffee (or 1 heaping tablespoon espresso powder dissolved in 1 cup water)
1 cup buttermilk
1/2 cup vegetable oil
1 tablespoon vanilla extract

Preheat oven to 350 degrees F (180 degrees C). Grease baking pans.

In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add the eggs, coffee, buttermilk, vegetable oil, and vanilla extract and beat until well combined. Batter will be runny.

Divide batter evenly between baking pans and bake for 40-50 minutes, or until a toothpick inserted into the cake comes out clean with a few crumbs. Cool cakes to room temperature before frosting or glazing.

Chocolate Fudge Frosting

Yields about 3 cups

3 cups semi-sweet or dark chocolate chips
12 tablespoons (6 ounces or 1 1/2 sticks) salted butter

In a medium saucepan, melt together chocolate chips and butter, stirring until smooth. Remove from heat and allow to sit for 3-5 minutes before frosting the cake.

Chocolate Ganache
6 ounces (about 1 cup) dark chocolate chips
1 cup heavy cream

In a small saucepan, melt the chocolate chips and heavy cream, stirring until smooth. Allow to sit for 10 minutes, before pouring a large spoonful of ganache on top the cake and smoothing until it just barely goes over the edge and drips down the side. Add more ganache if necessary.

Ghost Meringues
Inspired by Skinny Taste

3 egg whites
3/4 cup sugar
1 teaspoon vanilla extract
1/2 cup mini chocolate chips

Preheat oven to 175 degrees F (80 degrees C). Line a baking sheet with parchment paper.

In a double boiler, stir together egg whites and sugar for 2-3 minutes, or until sugar dissolves. Remove from heat and place in large mixing bowl. Add vanilla extract and beat egg whites on high until stiff peaks form.

Place meringue in pastry bag (or plastic baggie with the corner cut off) and pipe ghost shaped meringues directly onto prepared baking sheet. Place chocolate chips for eyes and mouth. Bake for 90 minutes to dry out the meringues. Once cool, place ghosts on cake, cupcakes, or just eat them all by themselves.

How to make Homemade White Cake Mix:
2 1/2 cups all-purpose flour OR 2 3/4 cups cake flour
2 cups sugar
1/2 cup non-fat dried milk or powdered buttermilk
1 teaspoon baking powder
1/2 teaspoon baking soda
Combine the ingredients. Store in a sealed, labeled container or baggie with the directions to make the cake. (This mix will fit in a quart-size baggie, just barely.) If you want to double, triple, or more the mix to make in bulk and keep it all in one big container, stir the mix well and measure out 5 cups of mix each time you make a cake (or a bit more if you used cake flour).

To replace in recipes calling for a store-bought white cake mix:
Use in any recipe calling for a white cake mix as a base (add 1 teaspoon vanilla to the recipe along with the cake mix as the recipe will assume powdered vanilla flavoring was included in the store-bought mix).

Cake mix directions:
1 recipe Homemade White Cake Mix
1 1/4 cups water
1/2 cup shortening or lard
4 egg whites
1 teaspoon vanilla
Combine all the ingredients. Beat to mix on low, then beat on high for two minutes. Pour into greased, floured cake pans. Bake at 350-degrees.

8″ or 9″ cake rounds — 20-25 minutes
13 x 9 pan — 35-40 minutes
cupcakes — 12-15 minutes
tube/bundt pan — 45-50 minutes

I LOVE CAKE!
If possible, I would eat cake everyday. I can't live without it, every time I finish my meals, I start thinking about it.
The only things stopping me from doing this are:
1.) My monthly allowance :(
2.) Fear of having diabetes, I don't have it, but I'm still scared of getting it from eating too much cake and sweets :(
3.) No cakes left for other people. =D
Right now the only thing I can do is to run for 1-2 hrs to burn down the sugar I have eaten.

If science can find a way to travel the stars, they can find a way to stop people from developing diabetes from consuming too much cake and sweets right??? Hey hey!
