Alright,so I know there is a similar thread about airships, but that's more along the lines of asking If you CAN make them.
The Highwind on the other hand I have to ask WHY hasn't someone tried? Its easy to see where the parts that keep it in the air are located, as well as where each system that allows it to move is. Its even easy to tell how everything is arranged thanks to the ingame maps as well as looking at the outside for location comparison. A real life version Cloud's Fenrir from FF7 can easily be found in a google image search.
For anyone wondering, the wikia also provided the specifications that fan's may or may not have to adjust for it to work, but in terms of Airships, this is possibly the most solid design you will find next to the 'Balloon Boat' from pokemon4Ever.
Up Next ill leave the Specifications for anyone who wants to work out the ACTUAL supplys needed.

So does anyone see any flaws in the measurements the creators gave us? Example: The Engines being made by Shinra thus not actually existing...
Canyone think of a few REAL engines to replace the fictional bits?

I'm also realizing that sometimes the creators may exaggerate weight or measurements managing to mess things up. Judging by the bridge and insides of the highwind though, we can safely say that it's a lot larger than a Goodyear Blimp...So that should give you a starting point to work with.
