So, I'm obsessed with mashed potatoes. It's probably my favorite part of anything I eat. I've tried a lot of stuff from around the net, but I'm curious if anyone has any favorite dishes involving mashed potatoes.

Fried mashed potato balls. Thin light batter shell, just enough to give a texture difference to the creamy mashed potato insides. Plain with dip is amazing, but the mashed potatoes could be herbed or seasoned.
I see them in comparison to a perfectly fried, soft inside, thick cut, potato French fry.

Goulash goes really well with mashed potatoes imo, it's like a rich beef stew with paprika and some tomato (there are recipes online, just make sure it's Hungarian, not the american version, that's a completely different thing and it's nasty). Meant to be eaten with noodles i think but i hate them so,,,, potato.

Also chicken simmered in chicken stock with an unholy amount of garlic until it can be shredded + then add heavy cream and parmesan = another great meal to have with mash

Amd as a brit, I must add the obligatory -- sausages and gravy.

You can't go wrong with steak and mashed potatoes! I actually really enjoy broccoli with mashed potatoes, if you season them well it's delicious and I like to use them almost like a chip by dipping them into the mash LOL

Shepherd's pie is one of my personal favorites. It's essentially a casserole with meat, veggies and gravy, topped off by a layer of mashed potatoes and baked. I find that a lot of people can't quite get the flavors right though, but perhaps that's just me and my palate.
