Sopa Paraguaya - Paraguayan Soup!

You might be thinking... Wait, soup isn't solid. It can't be solid. Well, in Paraguay, it can!

For those who don't know, Paraguay is a country right in the middle of South America. Yes, we are a developing country. Yes, we have TVs. Yes, we have cars. Yes, we have all the things first-world countries have. Yes, kindly get your heard out of your ass.

Paraguayan food is great. Its unique in the way that it blended the indigenous and Spanish culture together. In fact, this is reflected in our two official languages: Spanish and GuaranĂ­.

Sopa Paraguaya is an iconic dish in Paraguay. It's a cornbread-looking food that tastes a lot better than cornbread. It's a bit more moist than cornbread, and it has cheese. What could go wrong? The main ingredients are onion, cheese, corn flour, milk, and eggs.

Back to solid soup. Why is it called soup when it's cornbread? The story behind this dish (the truth is debatable,) involves Carlos Antonio Lopez, a former president. It's said that he loved a kind of white soup, elaborated of milk, cheese, egg, and cornflour. One day his cook messed up and added too much cornflour, resulting in a too-thick mixture. The cook, who didn't have time to make a new dish, decided to just stick the mixture in the oven and hope for the best. Lopez tasted it and found it delicious, and thus named it "Sopa Paraguaya."

It's great to eat at any time. It's traditionally eaten at breakfast as well as lunch and dinner. It's absolutely mandatory in asados (big barbecues with family and friends) and in Semana Santa (Holy Week), and weddings. Thus the existence of this phrase asked to long-together couples: "Cuando comemos la sopa?" "When do we eat the soup?"
