Quesadilla's quick and easy, I love 'em. But yeah you need rice. Or try a different theme. Like thai. Or you could make stir frys.

Or have you tried... *GASP* salads?

I love eating rice, but not with yogurt, although I could see how that would be yummy.

I like cooking, so I don't find it that much of an issue cooking different things, why don't you look for recipes online for inspiration? I was going to suggest buying a cookbook, but it's free looking for stuff online :p

Often the hard part is getting yourself to the stove and taking the time to make something decent rather than just eating a bite of cheese, a bite of vegetables, a bite of meat, a piece of bread - balanced diet though. You just gotta get into the habit, keep some random stuff at home, etc. The trick is I find, to use lots of basic supplies rather than pre-prepared stuff, because its more flexible to use building blocks. Cheaper too.

Perogies, bro. Perogies.
You can get them frozen in bags at the supermarket.
From there, all you have to do is boil them in water until they float,
remove from water, and top with sour cream, pepper, and bacon bits.

You can fry them after you boil them too. It's a little more work, but it tastes phenomenal. You can fry them up with some chopped onions too.

For something of the generic breakfasty variety, I came up with a pretty good recipe a few weeks ago. I'm still perfecting it, but it is quite delicious. Proportions can be changed to suit personal preference and such.

Anyway, it's sort of a breakfast salad thing. First you're going to need pancakes. Technically just one big one or a couple small ones. We have these prepackaged frozen ones(which actually tastes pretty good), so that can save you some time if you don't have the proper pancake making supplies. Anyway, make a couple small pancakes, save those for later.

Then, you're gonna want to make some scrambled eggs. Take a couple eggs, whip 'em up with a few dashes of salt, some ground cinnamon, a little milk, and maybe a little bit of vanilla extract if you're feeling adventurous. Scramble the eggs in a pan with a nice edge to it to contain all the ingredients you'll be adding. While that's happening, chop up a whole bunch of bacon slices. Once the eggs are sufficiently cooked throw in the bacon. Stir/flip it around until the you can smell the delicious bacon grease. It's very important to make sure the eggs have completely "solidified" into their scrambled state before moving on to the next step, because otherwise it'll all turn into a soggy mess(like the first time I made it...).

Take the pancakes you made earlier, and also chop them up into chunks. Then throw them into the mix of eggs and bacon. Stir it all up and let that cook for a while. If you want, do some cool flipping maneuvers (in fact if I could make this in a wok I totally would). I also usually like to melt in some cheddar cheese once everything has really cooked together.

Then, once you're ready to plate (or rather, bowl) the dish, pour on some maple syrup and mix it all up, kind of like a syrup stir-fry. Throw it all in a bowl, grab a spork, and enjoy!

And if your in the mood for some really crazy, check out these guys: http://www.youtube.com/user/EpicMealTime

Bread slice + mozzarella + pepperonis + bread slice + microwave = a good tasting, quick lunch.

Grilled chiken + the multi colored Rotini noodles + Italian dressing + shredded Parmesan cheese. Cook the chicken and boil the noodles, and then get a bowl and mix everything together. It's good hot, cold and reheated. And it makes a lot and lasts for days.
Seriously, I do this all the time. I created it when I was broke a few years ago. It's amazing.
