These are strawberry muffins, which have been injected with strawberry icing, and then topped with more strawberry icing! Everything was made from scratch, of course.

Its kinda hard to see, but... there are bits of strawberry in the muffins, and there is a light pink icing in the middle =D

1/4 cup canola oil
1/2 cup milk/heavy cream, whichever floats your boat. Heavy cream makes the muffins a bit richer/heavier.
1 egg
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup white sugar
1 3/4 cups all-purpose flour
1 cup chopped strawberries. Fresh is best, but frozen/ freeze dried works too.

Preheat oven to 400 degrees.
Mix together all of the ingredients, except the strawberries, until the mixture is smooth.
Line muffin pan with muffin liners and pour mixture into liners. Fill about 3/4.
Add strawberries evenly, and mix into batter while it is in the pan.
Bake until golden brown, and then allow 10-15 min to cool in the pan before taking them out.

1/2 cup shortening
1/2 cup butter, softened (and I mean EXTREMELY soft.. I put mine on top of the oven in a bowl for about 10 min while the muffins were cooking. Make sure you rotate it often so that one side doesnt melt..Melting is bad.)
1 1/2 teaspoon vanilla extract
2 1/2 teaspoon strawberry extract
1/4 cup finely chopped strawberries(optional.. I didnt do this.)
1ish pounds of confectioners' sugar(the amount you put in is based on taste. Get a 2 pound bag and use it until you feel that its good.)
2 tablespoons heavy cream

Mix everything together except the sugar. Blend well. I mean, really well. You shouldn't be able to distinguish the separate ingredients at this point.
Add the sugar a little bit at a time, blending it in after every addition.
Keep adding sugar to the icing until it tastes like icing, and when you put a spoon into it and pull it straight out, the icing makes a little spike that doesnt collapse in on itself. Look at that picture. It's a stiff peak.(Thats what its called. Also, its what you're going for here.)

Now, you need something called a flavor injector. (No, this isnt optional if you want a cupcakemuffindonut). It looks like that picture. Yes, it looks like a giant heroin needle.

Fill up the injector with the icing, and inject about 10 mL into the center of each muffin(dont go too far in, else it'll bleed out the bottom. You don't want bleeding muffins, do you?)

After you finish that, just top the muffin with the leftover icing (You'll have a LOT) and eat the icing you dont use. You can use a Icing bag, or just a knife to do this. Icing bags work better. That picture is an icing bag. Just fill up the bag, and squirt icing on top of the muffin.


NOW EAT THEM.

For anyone who lives in Tacoma Washington, theres a place in Hill Top called "Le Donut" were they sell donuts with baccon on it. It's the most bad-ass thing ever!
