From my personal experience it's less enjoyable to watch many series at a time, so maybe consider finishing (or dropping) the anime you started.
My personal favorites are The Tatami Galaxy/Yojouhan Shinwa Taikei, Mushishi and Clannad (especially the second season).

Soul Eater is my fav anime aaand then I have "Magi the labyrinth of magic" and Durarara.

Re:Zero, Cowboy Bebop, Kekkai Sensen and Samurai Champloo at the moment, but my tastes change from time to time. Baccano and Durarara were my favourites at one point.

Here's a list of must watch imo: NGE, Serial Experiments Lain, Cowboy Bebop, Devilman Crybaby, Paranoia Agent, Ima soko ni iru Boku, Kino no Tabi, Psycho-Pass (just season 1). These are all amazing series, so hope you have fun ^^

My favorite anime are NHK ni Youkoso, Bakuman, Steins Gate; Re Zero, Barakamon, School Rumble, Toradora, Monogatari Series, and so much more haha too many to mention
