From what I heard, this isn't the first time he's claimed he wants to retire. But if it's true, then I feel it's appropriate - the man deserves to retire after conceiving masterpiece after masterpiece. Few out there have such a near-spotless record of classics to their name, and even if he isn't out of creative juice, if he wants to put it to rest, that's just fine.
Though, from what I read, he is only retiring from feature-length films. The possibility of shorter endeavors, alternative projects, or derivative works/collaborations is still up in the air. Might as well keep our fingers crossed anyway.

What animes has this retiring Japanese KFC guy made?

The main reason idk what animes this guy made is mainly because I don't pay attention to the credits in animes. (except for the Voice Actor cast that is)
We will have to count on his son Goro to continue. At least we can look forward to movies in the similar art style. And I think genus runs in the family.
