I'm thinking about getting a JEM kit and building it myself, but there are a few ranging from $140 to $180 to $205 and idk which way to go, or if it's even worth doing st all

Well, you're definitely getting what you pay for, I can tell you that. The wood is likely basswood, the tuners likely won't hold tune too well, and I wouldn't expect their Floyd Rose to hold up to the real deal, either.
Is this for a first guitar, or is it just a project you wanna undertake?

I'm really just looking for a project here as long as it's remotely playable, definitely not expecting a $1500 jem out of it, but I'd like to put it together and make it my own.
