Give old Minecraft a shot. There's a mod called Better Than Adventure for Minecraft Beta 1.7.3 that is essentially a fork of the game. They've backported a number of new features, fixed some old glitches, added Quality of Life enhancements, and also just added a good bunch of new stuff. All this, in the vein of old Minecraft. It's fun whether you have a nostalgia boner for it or not.
