A good anime/manga that had ended to fast for me would have to be "Toto! The Wonderful Adventure." It only had five manga (books) in the series, but it was incredibly a top ranker for I. Between art, and a wonderful plot, it kept you hooked in. I suggest you check it out;

Right now I feel like the recent "Rurouni Kenshin: Restoration" should definitely continue. It's a cool reboot of the Kenshin manga with it's story taking a few ques from the recent movie but is a different story. As a Kenshin fan it is so great and the two volumes bought are definite must buys, but by the end of volume 2 you know it's open for more.
Still probably the series should have sequels around the time of the next two movies focusing on the Kyoto sagas.

Angel Beats was way too short to actually explain any plot. There were too many questions left unanswered.
I think if they made it 26 episodes instead of 13 it would be so much better T~T
