I agree, Tsubasa is amazing. However, my all-time favourite would have to be xxxHolic, another work by Clamp. There's less fighting and action but the plot and the characters make up for it.

Fruits Basket was pretty good, I can see where you're coming from on that.
Personally, my favorite manga is the adaption of Spice and Wolf from it's light novel form. Horo/Holo is a great character, and the economics catch my interest... As strange as that may sound.

I have to agree with KiraMitsukai, Black Cat was awesome. I'm also particularly fond of Eat-Man and Devil&Devil. on the non-shonen/seinen side I'm particularly fond of Otomen and Kimi ni Todooke and the josei title Kindan no Koi (altho Midnight Secretary by the same mangaka is more popular right now, as that focuses on vampires, but I'm more interested in werewolves so Kindan no Koi is more my thing).

I've only dedicately read 5 mangas:
Azumanga, Berserk, Cromartie, Golden Boy, and With The Light.
Berserk is epic, as you very well know.
With The Light is a dramaticized, slice-of-life story about autism. The books are also very sizeable (about as much as Vagabond, which I might pick up next.)
The rest are silly and light humor.

I really recommend the Manga even if you werent a fan of the Anime the manga is alot less girlier and easier to follow.I think its a little underrated from asking around forums like these.Its Romantic Comedy School Life but really as read in a review its more of a Slapstick Comedy School Life love Triangle that fans of Azumanga Daioh may particularly enjoy.

@1 I also prefer manga that are not easily predictable XD
There are heaps of manga that I really enjoy, but I like those which can catch you off surprisingly at times. Some have deep, straightforward story lines such as the soccer manga Area no Kishi (2009-ongoing). Some, although have simpler art such as Kyou Kara Ore Wa (1988), are extremely funny (I definitely recommend KKOW XDD).
I must apologise to many Jump fans, those of Bleach and Naruto and Katekyoushi Hitman Reborn, that it's not that I find these manga 'old' but I find them too predictable and that each chapter is too short. :/
